How To Cook Rice

The texture and taste of rice makes it a versatile side dish, or part of a main course.  Long grain brown or white rice will give you rice that separates after cooking.  Short grain rice comes in either brown or white, and will give you a sticky rice when cooked.  There are vast varieties of rice, some of which are domestic, and a lot of wonderful imported varieties.  Try black, red, or purple rice, which can be found in health food stores or in almost every international market.  

         Most rice is coated with something to keep the kernels from sticking together, and can be rice powder, powdered glucose, or talc.  Unless stated otherwise on the packaging, all rice must be washed in cold water to remove the coating before cooking. ~ June

Ingredients
  1. 1 cup uncooked brown or white long grain rice
  2. 1 3/4 cups water
  3. 1 teaspoon salt
Instructions
  1. 1. Measure rice and put in the saucepan. Fill with enough cold water to gently swish the rice around with your hands. Drain off water, and repeat the process two more times to remove the outer coating.
  2. 2. Add 1 3/4 cups cold water, salt, and heat to boiling. Reduce heat to low, cover, and simmer 30 minutes or until all moisture is absorbed. Do not lift the lid, as the steam helps cook the rice.
  3. 3. Remove from heat and fluff rice with a fork.
